Roast pumpkin/squash

  • 1 medium sized squash
  • 1/2 red pepper
  • 3 cloves of garlic
  • rosemary
  • salt
  • black  pepper
  • olive oil

  • Peel the squash and cut into chunky chips
  • Cut the pepper into strips
  • Put squash, pepper and unpeeled garlic on a baking tray
  • Drizzle with olive oil (very little)
  • Season with freshly-ground black pepper, fresh rosemary and salt
  • Roast in a hot oven for about 20 minutes until golden brown
