Salads (4) – chickpea

 Chickpea salad

  • 100g cooked chickpeas (I cheated and used pre-cooked from a jar)
  • 50g baby broad beans (frozen, thawed in a bowl of boiling water for 3-4 minutes)
  • 1 ripe tomato (chopped into bite-sized chunks)
  • 6 or 7 dried tomatoes  (soaked in boiling water for 3-4 minutes)
  • 1/2 red pepper (sliced or chopped)
  • 1/4 salad onion (sliced very very finely)
  • salt
  • olive oil
  • cumin seeds
  • mint

  • Once you have all the ingredients chopped, chunked and sliced, put into a salad bowl and season with olive oil, cumin seeds and salt
  • Decorate with mint
