Avocado and tomato
- 1 avocado (cut into 6 or 8)
- 2 tomatoes (sliced)
- roast red peppers
- 2 hard-boiled eggs
- salt
- extra virgin olive oil
- basil
The photo says it all ! I was actually debating whether to add this under salads or store cupboard meals! Not terribly original, but nice and light for a summer supper.
