Salads (9) – pasta & brocoli

Pasta & brocoli salad

  • 200g multi-coloured macaroni
  • 1 small head of broccoli (washed and separated into florets)
  • 1/2 red onion or salad onion
  • 6 dried tomatoes (cut in half and reconstituted in hot water for 3-4 minutes)
  • a handful of cherry tomatoes (cut in half)
  • salt
  • pepper
  • extra virgin olive oil
  • oregano
  • parsley (chopped)

  • Bring a litre of water to the boil, add salt
  • Boil the broccoli for 4 minutes, drain and put aside
  • Boil the pasta for the recommended time for “al dente”  minus one minute
  • Meanwhile gently fry the onion in a big frying pan or wok
  • Add all the rest of the ingredients when the pasta is done
  • Season, stir and add a drop of the cooking water

This can be eaten hot, warm or cold. You could add cheese to add a bit of protein.
