Pasta & brocoli salad
- 200g multi-coloured macaroni
- 1 small head of broccoli (washed and separated into florets)
- 1/2 red onion or salad onion
- 6 dried tomatoes (cut in half and reconstituted in hot water for 3-4 minutes)
- a handful of cherry tomatoes (cut in half)
- salt
- pepper
- extra virgin olive oil
- oregano
- parsley (chopped)
- Bring a litre of water to the boil, add salt
- Boil the broccoli for 4 minutes, drain and put aside
- Boil the pasta for the recommended time for “al dente” minus one minute
- Meanwhile gently fry the onion in a big frying pan or wok
- Add all the rest of the ingredients when the pasta is done
- Season, stir and add a drop of the cooking water
This can be eaten hot, warm or cold. You could add cheese to add a bit of protein.
