JP doesn’t like curry, so when he said he wasn’t in for lunch, I decided to make myself one with ingredients from the pantry and garden, plus leftovers I had in the fridge.
- 1 shallot, finely sliced
- 1 glove garlic, finely chopped
- 1 small apple from the garden, finely sliced
- 1/2 red bell pepper, sliced
- 1 hottish green pepper from the garden, thinly sliced
- 2 ripe plum tomatoes, diced
- 1 turkey breast fillet leftover from the day before, chopped
- 1 portion spelt noodles
- Madras curry powder
- salt
- extra virgin olive oil
- parsley, finely chopped
- stir fry the peppers, onion, garlic and apple and when rendered a little, push to one side in the wok and add the curry powder and stir for 30 seconds
- add the tomatoes and afterwards the turkey and season
- add a little water if necessary
- meanwhile, soak the noodles for 5 minutes in boiling water
- drain and mix with the curry mixture
- sprinkle with a little parsley
