Use-what’s-in-the-fridge curry

JP doesn’t like curry, so when he said he wasn’t in for lunch, I decided to make myself one with ingredients from the pantry and garden, plus leftovers I had in the fridge.

  • 1 shallot, finely sliced
  • 1 glove garlic, finely chopped
  • 1 small apple from the garden, finely sliced
  • 1/2 red bell pepper, sliced
  • 1 hottish green pepper from the garden, thinly sliced
  • 2 ripe plum tomatoes, diced
  • 1 turkey breast fillet leftover from the day before, chopped
  • 1 portion spelt noodles
  • Madras curry powder
  • salt
  • extra virgin olive oil
  • parsley, finely chopped

  • stir fry the peppers, onion, garlic and apple and when rendered a little, push to one side in the wok and add the curry powder and stir for 30 seconds
  • add the tomatoes and afterwards the turkey and season
  • add a little water if necessary
  • meanwhile, soak the noodles for 5 minutes in boiling water
  • drain and mix with the curry mixture
  • sprinkle with a little parsley
