Salad – baby gem & anchovy

Baby gem and anchovy salad

  • 3 baby red gem lettuce
  • 3 plum tomatoes, sliced
  • 1 can anchovies
  • 2 hard-boiled eggs, sliced
  • fresh parsley, chopped
  • chives, chopped
  • 1 small clove of garlic, crushed
  • extra virgin olive oil
  • vinegar
  • salt (but not much)

  • arrange the lettuce leaves on a big platter
  • add sliced tomatoes and anchovies
  • sprinkle the herbs over the top
  • make a dressing with the crushed garlic, salt, vinegar and oil
  • dress the salad
  • add the sliced eggs
