Baby gem and anchovy salad
- 3 baby red gem lettuce
- 3 plum tomatoes, sliced
- 1 can anchovies
- 2 hard-boiled eggs, sliced
- fresh parsley, chopped
- chives, chopped
- 1 small clove of garlic, crushed
- extra virgin olive oil
- vinegar
- salt (but not much)
- arrange the lettuce leaves on a big platter
- add sliced tomatoes and anchovies
- sprinkle the herbs over the top
- make a dressing with the crushed garlic, salt, vinegar and oil
- dress the salad
- add the sliced eggs
