Alcachofas guisadas con patatas – stewed artichokes with potatoes

  • 4 fresh artichokes
  • juice of half a lemon
  • 1 medium-sized onion, sliced
  • 2 cloves of garlic, crushed
  • 1 small glass white wine
  • 1 plum tomato, cut in half
  • pepper paste
  • 100g cured Serrano ham, cut into chunks

  • 2 medium potatoes, cut into medium-sized chunks
  • 2 hard-boiled eggs, sliced
  • extra virgin olive oil
  • salt
  • water

  • remove the stalks and outer leaves from the artichokes and then cut the tips off
  • cut each artichoke in half and sprinkle with lemon juice
  • in the pressure cooker, gently fry the onion and garlic until soft
  • add the wine, turn the heat up until the alcohol has evaporated
  • add the tomato, artichokes, pepper paste, ham and salt
  • cover with water, put the lid on the pressure cooker and cook for five minutes
  • as soon as you can take the lid off, add the potatoes and simmer for about 20 minutes (no pressure this time)
  • check the seasoning
  • serve with the sliced egg

This is quite a messy dish to eat, because you leave a lot of the outer artichoke leaves almost whole; so basically, you have to peel each leaf off put in your mouth from the bottom end and scrape the flesh off with your teeth. You need a spare plate or dish just to leave the discarded leaves.

You could also cut all the outer leaves off and just leave the heart, but then you would miss out on all the fun! Besides, you would need double the amount of artichokes.
