Quinoa salad

  • 1 cup quinoa
  • 1 tomato, diced
  • 1 green Italian pepper, diced
  • 6 cm cucumber, diced
  • 1/4 salad onion, finely chopped
  • 4-5 radishes, thinly sliced
  • juice of 1/2 lemon
  • coriander, chopped
  • chilli flakes
  • extra virgin olive oil
  • salt

 


  • cook the quinoa for 15 minutes in boiling, salted water
  • strain and rinse with boiling water, leave to cool
  • meanwhile, prepare all the veggies
  • put the cooled quinoa in a bowl, add the veggies, lemon juice, , coriander, chilli flakes and a pinch of salt, stir and leave to soak up the juices for at least half an hour
  • drizzle with a little oil
