Quinoa salad
- 1 cup quinoa
- 1 tomato, diced
- 1 green Italian pepper, diced
- 6 cm cucumber, diced
- 1/4 salad onion, finely chopped
- 4-5 radishes, thinly sliced
- juice of 1/2 lemon
- coriander, chopped
- chilli flakes
- extra virgin olive oil
- salt
- cook the quinoa for 15 minutes in boiling, salted water
- strain and rinse with boiling water, leave to cool
- meanwhile, prepare all the veggies
- put the cooled quinoa in a bowl, add the veggies, lemon juice, , coriander, chilli flakes and a pinch of salt, stir and leave to soak up the juices for at least half an hour
- drizzle with a little oil
