Braised pork ribs
- 1kg pork ribs (I bought it in one piece and separated the ribs myself)
- 8 shallots, whole
- 1 red onion, chopped very fine
- 2 cloves of garlic, crushed
- 1 large ripe tomato, chopped
- 1 stick celery, cut into 3 or 4
- 2 glasses of red wine
- salt
- freshly ground black pepper
- 1 teaspoon mustard seeds
- 1 bay leaf
- 1 sprig rosemary
- 4 medium-sized potatoes, cut into 2 cm pieces
- brown the ribs in a little oil, remove and put to one side
- add a little more oil and gently fry the onion and garlic
- put the ribs back in, turn the heat up and add the wine
- cook until the alcohol has evaporated
- add the tomato, shallots and celery
- add the seasoning, herbs and 1 litre of water, bring to the boil
- turn the heat down low, cover and gently simmer for about 2 hours
- add the potatoes, check the seasoning and cook for a further 30-40 minutes
Serve with broccoli and baby broad beans. This is my English edition and addition!!!
Serve with a good Rioja.
