Braised pork ribs

  • 1kg pork ribs (I bought it in one piece and separated the ribs myself)
  • 8 shallots, whole
  • 1 red onion, chopped very fine
  • 2 cloves of garlic, crushed
  • 1 large ripe tomato, chopped
  • 1 stick celery, cut into 3 or 4
  • 2 glasses of red wine
  • salt
  • freshly ground black pepper
  • 1 teaspoon mustard seeds
  • 1 bay leaf
  • 1 sprig rosemary
  • 4 medium-sized potatoes, cut into 2 cm pieces

  • brown the ribs in a little oil, remove and put to one side
  • add a little more oil and gently fry the onion and garlic
  • put the ribs back in, turn the heat up and add the wine
  • cook until the alcohol has evaporated
  • add the tomato, shallots and celery
  • add the seasoning, herbs and 1 litre of water, bring to the boil
  • turn the heat down low, cover and gently simmer for about 2 hours
  • add the potatoes, check the seasoning and cook for a further 30-40 minutes

 

Serve with broccoli and baby broad beans. This is my English edition and addition!!!

Serve with a good Rioja.
