Lamb’s lettuce, bacon & goat’s cheese salad
- 1 bag lamb’s lettuce
- 200g cherry tomatoes
- 1 small roll of goat’s cheese
- 200g bacon
- salt
- freshly ground black pepper
- olive oil
- balsamic vinegar
- Separate the bacon rashers and put three or four at a time between kitchen paper, microwave full power for 3-4 minutes until crisp. Cut up into small pieces (I use scissors)
- Cut the cheery tomatoes in half or quarters depending on the size
- Dice the goat’s cheese
- Put the lamb’s lettuce into a big salad bowl
- Add all the other ingredients
- Do not season until ready to serve
