Hake, “el Albatros” style
“El Albatros” was a very famous restaurant in Salamanca and this was one of the typical dishes. The recipe was always a secret, but this is the nearest I can get!!
- 2 pieces of fresh hake
- 6 very ripe tomatoes- whizzed up
- 1 clove of garlic
- mayonnaise
- salt
- extra virgin olive oil

put the tomatoes in a bowl in the microwave (about 4 minutes)
- meanwhile gently fry the garlic in a little oil
- whizz up the tomato and the garlic and return to the pan, add salt
- leave to reduce and thicken on a low heat (about 20 minutes)
- meanwhile put the hake in an ovenproof dish and bake for about 10 minutes
- cover with the tomato sauce and add knobs of mayonnaise
- put under the grill until golden brown
Serve with broccoli al dente (that is my touch).
