Merluza de “el Albatros”

Hake, “el Albatros” style

“El Albatros” was a very famous restaurant in Salamanca and this was one of the typical dishes. The recipe was always a secret, but this is the nearest I can get!!

  • 2 pieces of fresh hake
  • 6 very ripe tomatoes- whizzed up
  • 1 clove of garlic
  • mayonnaise
  • salt
  • extra virgin olive oil

  • put the tomatoes in a bowl in the microwave (about 4 minutes)

  • meanwhile gently fry the garlic in a little oil
  • whizz up the tomato and the garlic and return to the pan, add salt
  • leave to reduce and thicken on a low heat (about 20 minutes)

  • meanwhile put the hake in an ovenproof dish and bake for about 10 minutes

  • cover with the tomato sauce and add knobs of mayonnaise
  • put under the grill until golden brown

Serve with broccoli al dente (that is my touch).
