Caldo de jamón – ham broth
- 1 leek, cut in half and then lengthwise
- 2 sticks celery, cut in half
- 1 shallot, cut in half
- 2 cloves of garlic, whole
- cured ham
- extra virgin olive oil
- salt
- fideos – noodles

put all ingredients in the pressure cooker and cook uncovered for a couple of minutes
- cover with water
- put the lid on the pressure cooker and cook for 15 minutes
- let the pressure cooker release its pressure by itself, when ready, uncover
- take the ham out and put on one side
- blitz the other ingredients
- put the ham between a couple of sheets of kitchen paper and microwave until the ham goes crispy
- when cool enough to handle, cut into small pieces (use scissors)
- add a handful of noodles to the broth, cook according to instructions on the packet and serve with the ham on top
