Caldo de jamón – ham broth

  • 1 leek, cut in half and then lengthwise
  • 2 sticks celery, cut in half
  • 1 shallot, cut in half
  • 2 cloves of garlic, whole
  • cured ham
  • extra virgin olive oil
  • salt
  • fideos – noodles

  • put all ingredients in the pressure cooker and cook uncovered for a couple of minutes

  • cover with water
  • put the lid on the pressure cooker and cook for 15 minutes
  • let the pressure cooker release its pressure by itself, when ready, uncover
  • take the ham out and put on one side
  • blitz the other ingredients
  • put the ham between a couple of sheets of kitchen paper and microwave until the ham goes crispy
  • when cool enough to handle, cut into small pieces (use scissors)
  • add a handful of noodles to the broth, cook according to instructions on the packet and serve with the ham on top
