Coca de espinacas

Spinach & cheese tart

  • 1 packet ready-made puff pastry
  • 1 bag ready-washed spinach (300g)
  • 2 slices cooked ham
  • 100g cheese, in thin slices. I used a Spanish goats cheese, but not the typical chalky variety, it’s more solid. Any cheese that melts easily will do.
  • 2 eggs
  • salt
  • freshly ground black pepper
  • roast pumpkin seeds
  • chilli flakes (optional)

  • empty the bag of spinach in a large frying pan or wok and cook in a very little oil until rendered, season
  • meanwhile, unroll the pastry, place on baking parchment on an oven tray
  • spread with the spinach
  • beat the eggs and pour over spinach
  • tear the ham slices into irregular pieces and place on top
  • cover with the cheese slices
  • bake in oven for 18-20 minutes at 200º
  • take out of oven, sprinkle with chilli flakes and pumpkin seeds
  • return to oven fro 2-3 minutes

Delicious hot, warm or cold.
