Bulgur with veg

  • bulgur wheat, 1 cup
  • 2 cups boiling water
  • 4 spears of fresh green asparagus, chopped into 2cm pieces
  • 3 florets of broccoli
  • 1/2 salad onion, cut into thin strips
  • 1 red Italian pepper, cut into thin strips
  • 1 green Italian pepper, cut into thin strips
  • 1/2 small courgettes, cut into thin strips
  • 2 cloves of garlic, thinly sliced
  • salt
  • extra virgin olive oil
  • coriander, chopped
  • cumin seeds
  • coriander seeds
  • chilli flakes

  • put the bulgur a bowl and add the boiling water, cover and leave to soak for 15 minutes or until soft. I used small-medium bulgur, so it doesn’t need cooking as such
  • sauté the veg in a wok

  • add the coriander, cumin, chilli flakes and season
