Bulgur with veg
- bulgur wheat, 1 cup
- 2 cups boiling water
- 4 spears of fresh green asparagus, chopped into 2cm pieces
- 3 florets of broccoli
- 1/2 salad onion, cut into thin strips
- 1 red Italian pepper, cut into thin strips
- 1 green Italian pepper, cut into thin strips
- 1/2 small courgettes, cut into thin strips
- 2 cloves of garlic, thinly sliced
- salt
- extra virgin olive oil
- coriander, chopped
- cumin seeds
- coriander seeds
- chilli flakes
- put the bulgur a bowl and add the boiling water, cover and leave to soak for 15 minutes or until soft. I used small-medium bulgur, so it doesn’t need cooking as such
- sauté the veg in a wok
- add the coriander, cumin, chilli flakes and season
