Here are some of the things I made for my “cold collation”:
individual mini gazpacho
grilled zucchini & thick-cut boiled ham
hard-boiled quails eggs, cherry tomatoes, Parma ham rolled round mozzarella balls
sweet and sour sliced gherkin folded round thick-cut boiled ham, topped with dried tomatoes
salmon and Philadelphia mousse vol-au-vents
lettuce hearts with anchovies, flaked tuna, quails eggs, dark cherry tomatoes, asparagus shoots, basil and chives to garnish.
