Hash browns

This recipe is based on Gordon Ramsay‘s. It’s a bit of a fiddle, but it’s worth it in the end, especially when they are part of a full English breakfast and to be shared with the family.

  • 4 medium-sized potatoes, peeled and grated
  • 1 onion, peeled and grated
  • salt
  • pepper
  • cayenne pepper
  • extra virgin olive oil
  • two or three small knobs of butter

  • mix the potato and onion in a colander or sieve, squeeze with your hands to get as much moisture out as possible
  • add the salt, pepper and a sprinkle of cayenne
  • heat a drop of olive oil in a large frying pan and add the mixture
  • keep the heat up fairly high and squash the mixture down with a spatula
  •  put the knobs of butter round the edge of the pan and when the bottom is browned turn it over
  • it’s rather like a tortilla, but without the eggs

Gordon put his is the oven and cooked the eggs on top, but the first time I made this recipe, I fried the eggs separately and put the bacon in the microwave and then put them on top.
