Cod with red peppers
- 2 medium sized pieces of fresh cod with the skin on
- 2 red bell peppers, cut into 1cm squares
- 2 cloves of garlic, finely chopped
- 1 very ripe tomato, diced
- salt
- 2 or 3 small dried chilli peppers
- olive oil (2-3 tablespoons)
- finely chopped fresh parsley
- fry the peppers in the oil until they start caramelising
- add the garlic, stir
- add the tomato and cook for about 5-10 minutes
- add the cod, skin side down, cook for 2-3 minutes, turn over and cook for a further 2-3 minutes
- sprinkle with the parsley
Serve with broccoli al dente
