Roast pork ribs

Roast ribs

  • 1 rack of pork ribs
  • 2 cloves of garlic
  • salt
  • black pepper, freshly ground
  • parsley
  • chilli flakes
  • extra virgin olive oil
  • red white, 1/2 glass (the other 1/2 for the cook)
  • soy sauce
  • 2 ripe tomatoes, cut in half
  • 1 whole head of garlic
  • rosemary
  • honey

  • using a pestle and mortar, crush the garlic with a pinch of salt
  • add the parsley and chilli flakes, keep crushing
  • add wine, oil, pepper and soy sauce
  • mix and cover the ribs in this marinade
  • leave to marinade for 1-2 hours (keep turning)

  • add the tomatoes, rosemary and whole head of garlic, cover and bake in a medium oven for 1 hour
  • uncover, turn the heat up and roast for a further 30 minutes or so, keep basting

  • brush the ribs with honey and put back in the oven until glazed and nice n’ brown

Serve with whole mushrooms and “patatas panadera”* and a full-bodied red wine.
