Roast ribs
- 1 rack of pork ribs
- 2 cloves of garlic
- salt
- black pepper, freshly ground
- parsley
- chilli flakes
- extra virgin olive oil
- red white, 1/2 glass (the other 1/2 for the cook)
- soy sauce
- 2 ripe tomatoes, cut in half
- 1 whole head of garlic
- rosemary
- honey
- using a pestle and mortar, crush the garlic with a pinch of salt
- add the parsley and chilli flakes, keep crushing
- add wine, oil, pepper and soy sauce
- mix and cover the ribs in this marinade
- leave to marinade for 1-2 hours (keep turning)
- add the tomatoes, rosemary and whole head of garlic, cover and bake in a medium oven for 1 hour
- uncover, turn the heat up and roast for a further 30 minutes or so, keep basting
- brush the ribs with honey and put back in the oven until glazed and nice n’ brown
Serve with whole mushrooms and “patatas panadera”* and a full-bodied red wine.
